Fennel, Radicchio and Apple Salad

Ingredients
6 servings

1 headradicchio
cored and thinly sliced

1 bunchfennel bulb
large, thinly sliced with a mandoline

1sweet red apple
large, crisp, thinly sliced

2 tablespoonsapple cider vinegar

1 teaspoondijon mustard

1shallot
finely minced

1 pinchsalt

freshly ground black pepper
to taste

¼ cupextra virgin olive oil

⅓ cuppecans
chopped, toasted
Instructions
Step 1
Combine the radicchio, fennel and apple in a large bowl.
Step 2
In another bowl, whisk together the vinegar, mustard, shallot, salt and pepper.
Step 3
Gradually whisk in the olive oil, then pour half of dressing over vegetables and stir to combine.
Step 4
Taste, and gradually add more dressing until it’s to your liking. Garnish with reserved fennel fronds and pecans.
