Chorizo stuffed acorn squash.

Instructions

Step 1
Half squash and de-seed. Spread oil on both halves then season as desires ( I use cumin, salt, pepper and garlic powder). Bake for 15 minutes on 380. Cook chorizo in a skillet until almost cooked through, 4 or 5 minutes. Add apple, onion cook for 5 more minutes. Add the spinach and let it begin to wilt. Stir to incorporate the spinach. When the squash comes out, stuff each cavity with the chorizo mixture. Place back in the oven and cook on 400 until squash is soft, 15-20 minutes. Turn off the oven and add the cheese to both halves. Leave in the oven to melt for 5 minutes.
