Instant Pot Roast Beef with Vegetables (روستو)

This is a classic Lebanese dish, Instant Pot Roast Beef & vegetables recipe, this uses a fragrant blend of Middle Eastern spices that really bring it to the next level.

Instructions

Step 1
Heat the 2 olive oil in a pressure cooker over a high heat, season the roast generously with salt and All spice, sear the roast until golden brown about 3 minutes per side, you may season each side while flipping it, then set aside the browned beef roast.
Step 2
Add 1 tbsp olive oil in Instant Pot, add in sliced onions, then saute for 3 mins, add minced garlic, then saute for 30 seconds until fragrant.
Step 3
Pour 3 cup unsalted beef stock in Instant Pot, then deglaze by scrubbing all the flavorful brown bits off the bottom of the pot with a wooden spoon, give it a quick mix.
Step 4
Then put the browned beef in the instant pot, add in 2 bay leaves, dried thyme, peppercorns and close lid, then turn Venting Knob to sealing position for about 50 minutes. (Open the lid, then measure the temperature of the roast's thickest part with a meat thermometer).
Step 5
If the temperature is too low, place the roast beef back in the Pot then close the lid, continue to slow roast the beef, the temperature should rise 3°C - 5°C per 5 minutes.
Step 6
When the cook time is over, turn the Instant Pot off and let the pressure release naturally for 10 minutes before turning the valve to venting and opening the lid, remove the roast and set aside on a chopping board, wrap the roast loosely with aluminum foil & let it rest for 10 - 15 minutes.
Step 7
Add the Little Potatoes and carrots to the pot, (remove 2 cups of the meat broths for the gravy) put the lid back on, turn the valve to sealing and select Manual or Pressure Cook for 3 minutes.
Step 8
To prepare the sauce: In a small saucepan, melt the butter over a medium heat, then add the flour to it.
Step 9
Start by gradually pouring the meat broth over the saucepan while mixing continuously.
Step 10
Leave the mixture on the stove until it thickens, then remove the pot from the heat.
Step 11
After resting, slice your roast beef against the grain.
Step 12
Place the roast beef in a large plate with the potatoes, carrots around it and serve the gravy in a separate saucer.
