you can make it clear or creamy, vegan, vegetarian or with meat. use mini beets if you have the in hand. oh and it's good idea to add some fresh slices radishes as a garnish. it should be slightly tart and always served cold. traditionally people garnish it with sour cream but I've tried several decent mayonnaisse versions so feel free to experiment ( e.g.cashew sour cream should work). some people insists that it's good idea to let it stand overnight in a fridge before serving. I find that it gives additional richness and heartiness but still not necessary if you don't want to wait.
