Snow fungus is full of health benefits- some studies suggest it can slow down cancer growth, reduces cholesterol, boosts immunity, is good for heart, brain, skin and lungs. Here’s an easy and delicious way to enjoy snow (or white) fungus. Serves 20.
Ps: if you don’t like the texture to be too soft, reduce cook time by half to 5 minutes

Instructions
Step 1
Wash the dried snow fungus in water and rinse it out. Add it in instant pot with 5 litres of water and add honey or red dates in (optional)
Step 2
Cook under “soup” setting for 10 minutes, sealing the vent. Allow natural release and then add rock sugar to sweeten (add less if you prefer it less sweet). Serve warm or chilled
