Step 1
Preheat oven to 400*F.
Rack in the center of the oven.
Step 2
Cut the Peeled potatoes into 1/4- inch thick disks, starting at one of the small ends of each spud
Russet potatoes2 pounds
Step 3
Arrange the potato slices so that they all go in one direction and form as compact an arrangement as possible in a 10-inch skillet, preferably cast-iron.
Dutch Oven
Step 4
Whisk the broth, cream, chives, mustard, salt, and pepper in a medium bowl until uniform. Pour over the potato slices.

dried chives1 ½ tablespoons
dijon mustard2 tsp
table salt½ tsp
ground black pepper½ tsp
Step 5
Set the skillet over medium heat and bring to a simmer. Cover and simmer for 15 Minutes
Step 6
Uncover the skillet and sprinkle the cheese over the gratin. Optional: Top with buttered cornflakes. Transfer the skillet to the oven and back until the cheese has melted and even browned a bit, bout 12 minutes. Cool at room temperature for at least 10 minutes before serving.
