Palestinian fenugreek dessert

3 cupssemolina
coarse
1 cupall purpose flour
2 Tbsproasted sesame seeds
1 ½ Tbspblack seeds
2 Tbspdry milk
salt
2 Tbspsugar
1 tspbaking powder
1 ½ Tbspinstant yeast
¾ cupolive oil
2 Tbspghee
¼ cupfenugreek seeds
1 Tbspfenugreek seeds
roasted seeds mix
hemp seed
anise seed
roasted and grinded
1 cupfenugreek water
about 1/3
Instructions
Step 1
1. Soak 1/4 cup dry fenugreek seeds in 2 cups warm water overnight
Step 2
2. Change the water next morning and cook the seeds on high heat until it boils then lower the heat and cook for 20 minutes
Step 3
3. Combine all dry ingredients

4. Add the olive oil and ghee
Step 5
5. Mix and make sure the oil is well incorporated
Step 6
6. Add the cooked fenugreek seeds (amount depends on how you like it)

7. Add 1 cup warm fenugreek water (maybe 1/3 cup more depends on the semolina)

8. Knead well

9. Spread some tahini paste in the baking sheet

10. Spread the dough evenly in then baking sheet, 13x18 inch sheet pan

11. Cut the dessert into squares or diamond shape and let it rest covered for one hour

12. Bake in 350 degrees oven for 30-40 minutes
Step 13
13. Pour room temperature simple syrup on top
