Maamoul is a Lebanese cookies, made by semolina filled with dates, pistachios or walnuts, occasionally with figs.
Maamoul are usually made during the Easter and Adha holiday, prepared few days before Eid.

How to prepare Maamoul:
Step 1
Melt butter and ghee with oil over medium heat.
Step 2
Pour the mixture in a bowl over the flour and add the rest of the ingredients (Milk, sugar, salt, baking powder, yeast) and mix well.

Add half a cup of warm water, knead by hand until you get cohesive dough.
Step 4
Put the dough in a warm place to brew, cover the bowl so that the dough does not dry out.

Take a small piece of dough and shape it like a small ball, then make a hollow inside the ball in which we put the filling in the center (any of the 3 kinds of filling as desired) then close the ball, maintaining its spherical shape and lay it on a tray to rest for 10 minutes.

Then start by putting each ball in the maamoul mold to take a decorative shape u like, then remove it from the mold and start laying it down in a ghee greased oven tray and leave it for an hour to rest.
Step 7
Preheat oven to 180C degrees, put the tray in the the oven and bake for 15 minutes until the edges reach to a light golden color.

Remove the tray from the oven, keep it to cool completely then you may sprinkle the powdered sugar if required.
Dates filling Method:

In a bowl, Knead the paste of dates with butter and rose water very well until you get a homogeneous paste, divide the date paste into portions as per the art of dough you have prepared, and roll them into smooth balls, use oil if needed, as the date mass can be sticky.

Walnut or Pistachios filling method:

In a deep bowl, put the pistachios or walnuts, then add the blossom water to it, and stir well, then add the syrup gradually, while stirring, to make it a cohesive dough ready for filling.

If you are making the 3 types of filling at the same time, You should use 3 different shapes of molds to differentiate between the 3 types of Mamoul.
