Instructions
Step 1
Put potatoes in microwave in a bowl with a little water. Microwave on high for 3 minutes at a time until soft to a fork poke.
Step 2
Sautee onions, garlic, & jalapeño in butter in a large sautee pan on medium, until onions are translucent and beginning to brown.
Step 3
Add potatoes (without water) to pan, along with parsley & cilantro & salt & pepper and stir together.
Step 4
Crack eggs onto top of everything else, cover pan until eggwhites are just solid. Remove from heat and serve.
