Instructions

Step 1
Mix flour and salt together in pie plate and dredge chicken cutlets to coat, shaking off any excess flour.
Step 2
Heat oil in large skillet over medium-high heat. When shimmering, add chicken and cook until browned on both sides, about 4 minutes per side. Transfer to a plate.
Step 3
In same skillet, cook capers until warm, about 1 minute. Add white wine and cook, stirring to scrape up any browned bits on the bottom of the skillet. Continue cooking until liquid is reduced by half, about 2-4 minutes.
Step 4
Lower heat to medium-low, then add lemon juice, chicken stock, and butter. Stir constantly, until smooth, about 2 more minutes.
Step 5
Return chicken to skillet and continue cooking until chicken is warmed through.
Step 6
Garnish with parsley and serve with rice.
