Instructions

Step 1
Preheat oven to 350°F. Cut the tops off or halve the bell peppers. Remove seeds and membranes, rinse peppers. Place empty peppers on a parchment lined baking sheet and bake for 15 minutes. Remove from oven and set aside to let cool.
Step 2
While the peppers are baking: wash, peel and cut potatoes. Boil or pressure cook potatoes until soft. Drain. Mash with nutritional yeast, garlic powder and onion powder, and if needed, add a splash of vegetable broth.
Step 3
Stuff peppers with mashed potato mixture and place back on the parchment lined baking sheet. Bake for 20-30 minutes until peppers are soft and beginning to brown.

Air Fryer Version

Step 4
AIR FRYER VERSION: Place the stuffed peppers in an air fryer for 20-30 minutes, until peppers are soft and beginning to brown.
