Instructions

Step 1
Bloom yeast in lukewarm water with 2T sugar for 15 minutes

combine all dry ingredients

Mix in all liquid ingredients using the paddle of the stand mixer
Step 4
if necessary, add heaping spoons of flour to mix until it pulls away from the bowl and form a dough
Step 5
switch from paddle to dough hook and knead for 7-10 min
Step 6
Place in a covered greased bowl to rise, until it doubled in size. Usually 45 minutes to an hour.
Step 7
Divide and shape into two loaves. Place in greased (cooking spray, parchment paper, whatever you prefer) Dutch ovens for shepherd loaves, loaf pans, or artisanal loaves. Score the top of the loaves. Allow to raise a second time - again usually 45 minutes to an hour.

Heat oven to 400.

Step 9
Brush the loaves with an egg wash. Place the covered dutch oven (loaves or other pans) into the oven. Reduce heat to 350, and bake for 40 minutes or until it reaches an internal temperature of 190.
Step 10
When it is removed from the oven, remove from pan and cool on a wire rack for at last an hour before slicing
