Instructions
Step 1
Preheat oven to 350 degrees farenheit.

Step 2
In a mixer, mix to thoroughly combine butter, sugar, and brown sugar.
Step 3
Add eggs, vanilla, and salt.
Step 4
Continue mixing until thoroughly combined.
Step 5
Mix baking soda with hot water, then add into mixture.
Step 6
Add pumpkin and continue mixing until well combined.
Step 7
Add flour and slowly mix until just combined. It may be easier and faster to just use a stiff spatula or spoon.
Step 8
Add white chocolate chips and mix gently with a spatula until combined.
Step 9
Line 2 large baking trays with parchment paper.
Step 10
Use a cookie scoop or spoon to drop cookies onto the baking trays, 1 to 1.5 inches apart.
Step 11
Bake at 350 for 11-13 minutes.
Step 12
Allow to cool before eating or removing from tray.
