Silken Tofu Chocolate Peanut Butter Mousse

This is a tweak of Silken Tofu Chocolate Mousse - A super easy dessert or snack, ready in 5 minutes. Gluten-free, dairy-free, eggless, and vegan.
Make sure to use a good chocolate. If I am making it for myself, I use Trader Joe’s Pound Plus 70% bar. If I am having guests, I splurge on the Scharffen Berger.
This recipe can be doubled or tripled; just keep the same proportions for the ingredients. It is reliable dessert for guests because it rarely splits. Just take your time blending the chocolate and peanut butter.

Step 1
Break up the chocolate and place it with the peanut butter in a double boiler or a glass bowl set of a pot of simmering water. Stir until chocolate is melted and the peanut butter and chocolate are fully combined (no streaks). Set aside to cool while you blend the tofu.
Step 2
Meanwhile, place the silken tofu in a food processor and blend until very smooth. You may need to scrape down the bowl and blend again. Add the melted chocolate and blend until well combined.
Step 3
Spoon the mixture into 3 ramekins or glasses, and refrigerate for at least 30 minutes or overnight.
Step 4
To serve, garnish with chocolate shavings or a small cookie.
Step 5
Leftovers will keep in the fridge for up to 3-4 days
