Instructions
Step 1
Preheat oven to 375F. Line 9 muffin tins with paper liners.
Step 2
Combine the eggs, oil, and cream. Stir to blend.
Step 3
Add the whey powder, baking powder, Splenda, cinnamon, and lemon rind. Stir until combined. Don't over stir.
Step 4
Fold in the blueberries and gently spoon 1/2 the batter into the muffin tins.
Step 5
Place a cube of cream cheese into the center of each.
Step 6
Place the remaining batter on top of the cream cheese.
Step 7
Bake for 8 to 10 minutes or until lightly browned.
