Carnitas Quiche (WORK IN PROGRESS)

Classic quiche with a carnitas twist

Instructions

Step 1
Preheat oven @ 350 F

Bake pie crust @ 350 for 8 minutes

Crisp Carnitas

In a hot pan, using some of the fat from the carnitas, saute the onion and jalapeno, in a separate space in the pan, add small pieces of pineapple

Once sauted, add Carnitas, mix well with onion and jalapeno, and distribute evenly across pan to crisp

Remove pie crust, and distribute meat mixture evenly, use about 2/3 of the meat

Mix together eggs, cream, half the cilantro, and half the cheese in a bowl. Mix thoroughly then pour evenly over pie

Mix together remaining meat and cheese, and distribute evenly over the top
