Inspired by Mark Sisson’s primal kitchen cook book recipe. I omitted some ingredients and made it my own. Super yummy and very filling. I usually double the recipe and make a whole bag of potatoes and we make this our main meal.

Instructions

Step 1
Preheat oven to 400 degrees and line a baking sheet with nonstick foil

Cut the potatoes in half lengthwise, then cut those halves lengthwise, and then repeat one more time. You can slice in half an additional time if you want even smaller wedges.
Step 3
Toss the wedges with avocado oil, chili powder, garlic, and sea salt.
Step 4
Place the wedges in a single layer on the baking sheet and cook for 25 minutes. Rotate the pan and cook for another 20-25 minutes, or until potatoes are cooked through and crispy.
Step 5
While the potatoes are cooking, cook the bacon in a skillet until crispy. Let it cool, and then chop or crumble with your hands into small pieces.
Step 6
When the potatoes are done cooking, place them on a large tray or plate. Top with goat cheese crumbles, bacon, cilantro, and avocado. Serve warm
