Instructions
Step 1
Preheat the oven to 450F.
Step 2
Place turkey breast on a raised rack in a roasting pan.
To prevent smoking when hot fat hits the roasting pan, pour in about an inch of water.
Step 3
In a small bowl, combine chutney, mustard, orange juice and pulp, and lime juice and pulp.
Step 4
Rub over turkey, then place the roasting pan in the oven and immediately lower the temperature to 325F.
Step 5
Roast, basting occasionally, until internal temperature registers 185F on a meat thermometer, about 2 1/2 hours.
Step 6
Let stand for about 20 minutes before carving.
