Ingredients
10 servings
3chicken breasts
12 ozquinoa
28 ozcan diced tomatoes
10 ozcan enchilada sauce
10 ozwater
1can black beans
1can corn kernels
drained, or 1 cup frozen
4 ozcan diced green chilies
1onion
diced
1 Tbspchili powder
1 Tbspcumin
1 Tbspminced garlic
1 tspsalt
1 cupshredded sharp cheddar cheese
or mozzarella, use after cooking
Instructions
Step 1
Add all ingredients, except cheese, into the crockpot or slow cooker.
Step 2
Cook on high for 4 hours or low for 6-8 hours.
Step 3
Once cooked, shred chicken then stir cheese into the casserole.
