Chick Pea Cookie Dough Balls
A great alternative to the real thing when you have a sweet tooth. Best after they’re chilled in the fridge. Don’t give up if you don’t like them the first time you make them. You may want to add more peanut butter, some cinnamon, etc.

Ingredients

1 ½ cupschickpeas
soaked, can use 13.5 oz can cooked chickpeas, drained, rinsed, and patted dry
½ cupnatural peanut butter
¼ cuprolled oats
uncooked
2 tsppure vanilla extract
2 ½ Tbsppure maple syrup
½ tspground cinnamon
⅛ tspsea salt
1 Tbspunsweetened almond milk
plus more, as needed to thin
⅓ cupdark chocolate chips
or cacao nibs
Instructions
Step 1
Add chickpeas, peanut butter, vanilla extract, pure maple syrup, rolled oats, cinnamon, and sea salt to a food processor.
Step 2
Blend until smooth and creamy.
Step 3
Add cookie dough mixture to a mixing bowl, and fold in the chocolate chips.
Step 4
Roll into balls. I use a 1 1/2 tbsp ice cream scoop for even measurement)
