These are my berry compote granola cups, perfect for brekkie on the go or a quick snack.

Ingredients
8 servings
granola cups
2 cupsrolled oats
½ cuprice malt syrup
or maple syrup
0.33 CupPeanut Butter
3 Tbspsoy milk
plus a dash more if needed
1 tspvanilla extract
1 cupdesiccated coconut
chia seeds
berry compote
1 cupfrozen blueberries
1 cupfrozen raspberries
1 Tbsprice malt syrup
or maple syrup
1 TbspArrowroot Flour
salt
protein yogurt
Instructions
Step 1
Preheat oven to 180°C and grease a muffin tray.
Step 2
Mix all granola cup ingredients together in a large bowl. Press into the muffin tray, forming a cup shape, and bake in the oven for 25-30 minutes, or until golden.
Step 3
Remove from the oven and allow to cool for 20 minutes before removing the granola cups from the tray.
Step 4
Meanwhile, mix all the ingredients for the berry compote in a small saucepan. Heat over medium to high for 5 to 8 minutes, whisking regularly, or until thick and jammy.
Step 5
Whisk together the ingredients for the protein yoghurt until thick.
Step 6
Fill the granola cups with the berry compote and protein yogurt. Optionally garnish with a dusting of cinnamon and dark chocolate.
