Gluten-free dairy-free chocolate bars

These berry-chocolate bars are naturally gluten and dairy free. They're adapted from an old Austrian recipe from my grandma. I know the fact they’re gluten and dairy free may turn off some, but I can assure you all my friends love them and they don't taste boring. They’re also easy and fast to make. Just make sure you have a hand or stand mixer.

Step 1
Preheat the oven to 350 F.

Separate the egg whites from the yolks. Mix the 7 egg yolks in a separate mixing bowl with sugar at medium to high speed until they become pale. Melt the chocolate at low temperature stirring and checking it every now and then to avoid it from burning. Add the melted chocolate and continue to mix.
Step 3
Clean the whire whip of your mixer and beat the 7 egg whites at highest speed in a clean bowl until they become stiff and have the consistency of snow.
Step 4
Slowly add the flour as well as the egg whites to the yolk, sugar and chocolate mixture using a spatula. Mix it all so that the batter becomes homogeneous by making large circular movements. Don’t use the mixer at this stage as it would affect the fluffiness of the beaten egg whites and not give you the right light consistency you are aiming for. Finally, add the berries and stir to incorporate them.
Step 5
Cut parchment paper to cover the baking sheet. Pour the mixture on it.
Step 6
Bake for approximately 15 minutes.
Step 7
Let it cool down and cut the sponge into squares.
