Instructions
Step 1
Put chicken thighs in large saucepan and cover with stock
Step 2
Bring to the boil and simmer for 1 hour
Step 3
Add courgette and carrots and bring back to the boil and simmer for 45 minutes
Step 4
Remove chicken from pan and discard skin and bones and shred chicken
