Chicken soup for the soul! This soup is the perfect pick me up if you're feeling under the weather and is great for a cold night too.

Ingredients
5 servings

1whole chicken

1brown onion
sliced

4carrots
large, peeled & chopped into small/medium sized pieces

3celery sticks
chopped into small/medium pieces

4 ½ cupswater

3 cupschicken stock
or dissolve 1 stock cube with 3 cups of water

3 tspgarlic
chopped

2 tspdried thyme

parsley
chopped

2 tspmixed herbs

black pepper
to taste
Instructions
Step 1
Add the whole chicken into a large pot & cover it will all the ingredients listed above
Step 2
Turn on the heat & bring the pot to a boil
Step 3
Once boiling, turn down the heat to a gentle simmer, cover the pot with a lid and leave to cook for about 1.5-2hours (till the chicken has cooked through).
Time may vary depending on the size of the chicken.
Step 4
Once cooked, carefully lift the chicken out of the pot & let it rest for 5 minutes
Step 5
Shred the chicken from the bone & add the shredded chicken pieces back to the liquid in the pot. Stir and add salt & pepper to taste before serving
