Kashmiri Chai, also called noon chai or pink tea, is a rich and creamy, yet slightly spicy flavoured tea.

Instructions

Step 1
Place medium saucepan over high heat. Pour water and whole spices (cinnamon stick, star anise, cloves and cardamom pods). Whole spices are optional and only enhance the flavour.
Step 2
Bring it to boil and reduce the heat to medium.
Step 3
Add kashmiri tea leaves, and simmer until the liquid is halved.
Step 4
Add baking soda,It'll fizz a little. Add salt and allow this mixture to boil over high heat.
Step 5
Pour the ice cold water into prepared tea liquid and reduce the heat to low.
Step 6
Pour back and forth while using a ladle . And make sure drop it back into the pot from a height. If you'd like, you can aerate several times to deepen the color. Mine took around 10 minutes.
Step 7
You will notice the colour in the water go from pale green to a deep pink color. If not, add another pinch of baking soda and keep aerating.
Step 8
In a saucepan or kettle pour milk and bring to boil (I use half whole milk and half evaporated milk).
Step 9
Add the sweetener while boiling the milk.
Step 10
Pour the prepared liquid until the desired colour and consistency of tea.
Step 11
At this stage , allow it to slightly boil and , turn off the heat immediately. Don’t boil it too long it will lose some of its pink color.
Step 12
Serve the tea into cups and add crushed almonds and pistachios. (And add salt or sugar as desired while serving)
