Instructions
Step 1
Heat olive oil in a pan over medium heat. Add onion and cook 4-5 minutes until soft.
Step 2
Add garlic and cook 30 seconds.
Step 3
Add the orzo and toast 30 seconds.
Step 4
Add 3 cups of the broth, and salt and pepper, stir, bring to a boil. Stir, Turn down to a simmer, cover and cook 8 minutes.
Step 5
Stir, Add in peas the remaining broth and cook another 2 minutes until the orzo is al dente and the peas are done.
Step 6
Mix in the cheese, more salt and pepper to taste, lemon zest and juice
Step 7
Garnish with extra cheese and basil
