Instructions

Step 1
Heat 1 inch of water in medium saucepan to simmer
Step 2
Set bowl of whisked egg white and sugar over saucepan
Step 3
Whisk until liquid reaches 160-165° F
Step 4
Add to the bowl of a stand mixer (or hand mix) and whisk on high until mixture is thick, shiny and holds stiff peaks. About 4 minutes
Step 5
Add vanilla, cornstarch and vinegar and mix on high for 10 seconds to combine
Step 6
Spread mixture onto prepared parchment or silicon baking mat in a 10" round, making the center slightly lower than the sides
Step 7
Bake in 250° oven for 1.5 hours. Then, leave in oven overnight with door propped open with a spoon handle to allow vapor to escape.

Topping

Step 8
Combine cream cheese, powdered sugar and vanilla; then, fold in whipped cream
Step 9
Spread on top of cooled meringue (or refrigerate/freeze until ready to serve)
