Hummus
Mediterranean mezze is a party on a platter. You can keep it simple with minimal elements or go all out with a variety, making it more exciting and flavorful. We had a go at homemade hummus and that’s when we decided to serve up a Mediterranean mezze platter.
We served:
Chicken kebabs
Toasted pita bread
Hummus
Tzatziki
Cucumber
Jalapeños
Peppadews
Mediterranean olives and feta
The possibilities are endlessly you want to go all out!

Hummus
1 can chickpeas
1/4 cup freshly squeezed lemon juice
1/4 cup tahini paste
1/2 tsp fresh garlic
2 tbsp olive oil
1/2 teaspoon fine cumin
1/2 tsp salt
4tbsp ice water
-Drain, rinse and peel chickpeas
-Combine tahini and lemon juice and process in a food processor for just over a minute until smooth and creamy, scraping down the sides of the bowl in between
-Add olive oil, garlic, cumin and salt and process further until smooth
-Add chickpeas, a little at a time until fully blended
-Remember to keep scraping down the sides of the bowl in between
-Lastly, slowly add ice water, 1 tbsp at a time while the processor is turned on
-Serve with freshly chopped parsley, smoked paprika and olive oil
