Hummus

Mediterranean mezze is a party on a platter. You can keep it simple with minimal elements or go all out with a variety, making it more exciting and flavorful. We had a go at homemade hummus and that’s when we decided to serve up a Mediterranean mezze platter. We served: Chicken kebabs Toasted pita bread Hummus Tzatziki Cucumber Jalapeños Peppadews Mediterranean olives and feta The possibilities are endlessly you want to go all out! Kebab recipe has been been posted previously on the highlights tab Hummus 1 can chickpeas 1/4 cup freshly squeezed lemon juice 1/4 cup tahini paste 1/2 tsp fresh garlic 2 tbsp olive oil 1/2 teaspoon fine cumin 1/2 tsp salt 4tbsp ice water -Drain, rinse and peel chickpeas -Combine tahini and lemon juice and process in a food processor for just over a minute until smooth and creamy, scraping down the sides of the bowl in between -Add olive oil, garlic, cumin and salt and process further until smooth -Add chickpeas, a little at a time until fully blended -Remember to keep scraping down the sides of the bowl in between -Lastly, slowly add ice water, 1 tbsp at a time while the processor is turned on -Serve with freshly chopped parsley, smoked paprika and olive oil

Instructions

Step 1
Drain, rinse and peel chickpeas
Step 2
Combine tahini and lemon juice and process in a food processor for just over a minute until smooth and creamy, scraping down the sides of the bowl in between
Step 3
Add olive oil, garlic, cumin and salt and process further until smooth
Step 4
Add chickpeas, a little at a time until fully blended
Step 5
Remember to keep scraping down the sides of the bowl in between
Step 6
Lastly, slowly add ice water, 1 tbsp at a time while the processor is turned on
Step 7
Serve with freshly chopped parsley, smoked paprika and olive oil
