Easy Peppermint Hot Chocolate Cookies

Instructions

Step 1
Using an electric mixer, blend the butter, white sugar, and brown sugar until it forms a fluffy mixture
Step 2
Add the egg and vanilla extract and thoroughly mix
Step 3
Add the pancake mix, then mix until the batter is smooth. Be careful not to overmix.
Step 4
Chop the peppermint candy into chunky pieces, then fold into the batter
Step 5
Refrigerate and chill the dough for at least 30 minutes - and preheat oven to 350
Step 6
Scoop the batter onto parchment paper or a greased baking sheet. About 2 tbsp per scoop makes 24 cookies. Space scoops 2 inches apart.
Step 7
Bake at 350 for 12 to 20 minutes depending on how gooey vs crunchy you want them and how big the cookies are
Step 8
Allow cookies to cool before eating them. They will be crumbly at first and need time to set.
