Instructions
Step 1
In a medium saucepan, melt unsalted butter and set to the side to cool.
Step 2
Roughly chop the dark chocolate and set it aside.
Step 3
In a bowl, combine all dry ingredients: cake flour, all-purpose flour, kosher salt, cornstarch, and baking soda. Whisk together.
Step 4
Using a stand mixer with the whisk attachment, add the sugars: brown sugar and granulated sugar. Whisk together on medium speed then slowly add the butter.
Step 5
Once combined add the eggs one at a time followed by the egg yolks.
Step 6
After a few seconds, or once the mixture is smooth switch to the paddle attachment and mix in the flour mixture until is well combined.
Step 7
Add in roughly chopped walnuts and chopped chocolate.
Step 8
Place in a bowl, cover, and refrigerate for 45 minutes.
Step 9
Weigh each dough ball out to 5oz. Place on a parchment-lined baking sheet.
Step 10
Bake a 425F for 15 minutes.
