Step 1
Place your petite Yukon gold potatoes into a large pot and fill with water. Heat this pot on high until boiling and boil the potatoes until they are fork tender.

Preheat your oven to 425 degrees and once your potatoes are fork tender drain the water and allow the potatoes to cook a little.

Get a large baking or cookie sheet and spread your potatoes out along the baking sheet. Lightly press on each potato with the bottom of a glass in order to smash them. Be sure not to press too hard.

Mix together your melted butter, salt, pepper, garlic powder, onion powder, paprika, minced garlic, and chopped parsley. Brush the mixture along the tops of your smashed potatoes.

Bake at 425 for anywhere from 35-45 minutes depending on how crispy you want them.
