Prep these ingredients ahead of time
1green bell pepper
small diced
1red bell pepper
small diced
1yellow onion
small diced
1.5celery stalk
small diced
4garlic cloves
minced
2green onions
thinly sliced
parsley
Freshly chopped, enough for garnish as well
8 ozcountry sausage
mild, small diced
1 lbground chuck

Instructions
Step 1
Using a large pan or pot over medium high heat. Add the ground chuck, and cook until brown. Remove & set aside, make sure to discard the excess grease
Step 2
Using the same pan or pot over medium heat add the olives oil. Then add the sausage. Once it begins to brown add the bell peppers.

Step 3
Cook for a few minutes then add the onion and half of the green onions . Season with the spices listed below. Add the celery and garlic. Sauté for a few minutes and allow the flavors to develop.

Step 4
Add the epis along with the butter. Then add the cooked rice and cooked ground beef. Mix until well combined. Season with spices listed below.
Step 5
Add in the other half of the green onions and parsley. Mix, serve and enjoy!
