8 ozcream cheese
8 ozMonterey jack

16 ozsharp cheddar cheese
divided into 8 oz each
8 ozsmoked Gouda cheese
shredded
8 ozmozzarella cheese
cubed
16 ozvelveeta cheese
cubed
2 cupswhole milk
divided
1 cupheavy cream
½ cupsour cream

Instructions
Step 1
Preheat oven to 350 degrees.

Step 2
Cook the macaroni in boiling salted water until it reaches al dente; drain the macaroni and pour into a large bowl.
Step 3
Add in one stick of butter to the macaroni; stir until it melts completely in the pasta and add three eggs to the macaroni and mix in. Set aside.
Step 4
Heat a heavy duty/deep non-stick pan on med-hi heat and melt 1 stick of butter. Add the flour and cook the roux until raw flour is gone and is thickened (1-2 minutes).
Step 5
Add 1.5 cups of cold milk, continuously mixing the entire time. Also add 1 cup of heavy cream at this time.
Step 6
Add the following cheeses: cream cheese, Monterrey jack, mozzarella, Velveeta, smoked Gouda, and 8 oz. of the cheddar cheese. Mix well on med-low heat.
Step 7
Add the sour cream; mix it in very well. Proceed to add all of the seasonings. Stir until cheese starts pulling off from the sides.
Step 8
Add the last half cup of whole milk. Stir to mix in well (cheese sauce should still be thick). Remove from heat and set aside.
Step 9
Add batches of the cheese sauce on top of the macaroni and stir completely and carefully.
Step 10
Smooth out the mac n cheese in a casserole dish; add the last 8 oz of sharp cheddar cheese on top and even it out.
Step 11
(optional) Cut up the ½ stick of butter and sprinkle it on top of mac and cheese.
Step 12
Bake for 45 mins or until cheese is melted and golden brown on the edges.
Step 13
Let it cool for 10-15 mins.
