Instructions
Step 1
Gather all ingredients Soak rice noodles for 30min while preparing other ingredients (cuts down boiling time) Grab a medium pot, add water, turn stove to medium high heat and bring to boil
Step 2
When water begins to boil in pot add rice noodles and cook 2-4 min until Al dente (to the bite) Strain under cold water to stop cooking Set aside in serving dish
Step 3
Chop Cabbage, carrot & onion into thin slices for an even cook in one bowl Grate garlic & ginger in small bowl In the same small bowl Add soy sauce, sriracha, brown sugar, lime & fish sauce, mix , split in 1/2 & set aside

Cut chicken 1/4 inch pieces & 1/4 of sauce mixture to marinate & set aside
Step 5
Grab a sauté pan, turn to medium high add little oil to coat & add marinated chicken Cook 6-7 minutes Add chopped vegetables & cook for another 2-3 mins until vegetables are semi translucent add salt/ pepper to taste

Take sautéed chicken and vegetables , add to resting rice noodles Grab tongs and toss evenly Add roasted peanuts, sesame seeds, cilantro + remaining sauce from marinate & toss evenly Serve with extra lime slices
