Ingredients
10 servings
3 x 8 ozbaby portabella mushrooms
containers, pre sliced & wash before!
1 ¼ colive oil
2 Tbspbalsamic vinegar
1 Tbspfresh rosemary
chopped
1 tspthyme
can be dried or fresh
½ tspsalt
pepper
Parmesan
parsley
for garnish
1 cmayo
1 Tbspfresh lemon juice
2 Tbspdijon mustard
3garlic cloves
minced fine
salt
to taste
pepper
to taste
1baguette
sliced into 1/2” rounds
Instructions
Step 1
In a medium bowl whisk the olive oil into the vinegar until fully incorporated, add fresh rosemary, thyme, garlic, fresh cracked black pepper, and salt.
Step 2
Add sliced mushrooms to the marinade, let stand in refrigerator for 2-3 hours. Turn the mushrooms every 30 minutes or so during the time period.
Step 3
Lightly brush baguette slices with olive oil, bake at 350F for 8-10 minutes until slightly crisp & golden, set aside.
Step 4
Sauté the marinated mushrooms with some of the marinade until done, stirring frequently (they’ll shrink in size & have a glossy appearance), it takes about 10 minutes.
Step 5
Spread a dollop of garlic aioli on each baguette slice, top with a small spoonful of mushrooms. Sprinkle freshly grated parmesan & chopped parsley over the mushrooms. Enjoy!!
