Lollipop Chicken
Add some style to your plate with this baked lollipop chicken. Glazed with my homemade Tennessee Sauce, these juicy drumsticks will have you licking your fingers!

Sauce
Instructions
The Sauce:
Step 1
Cut the top of the garlic head. Place in aluminum foil and drizzle olive oil over it together with rosemary, wrap the foil and place in toaster oven for 1 hour (180ºC).
Step 2
In a saucepan, add olive oil and sauté onion.
Step 3
Stir brown sugar, pineapple juice, water, oyster sauce, Worcestershire sauce, and soy sauce together in the saucepan.
Step 4
Squeeze and mash the roasted garlic into a paste. Whisk all (or half depending on preference) into the saucepan.
Step 5
Stir lemon juice, Jack Daniels, crushed pineapple, and cayenne pepper into the sauce; bring to a simmer and cook until the volume of the liquid reduces by half and is thick and syrup-like. (corn starch to thicken optional)
Chicken:
Step 6
Preheat oven to 160ºC
Step 7
Cut the meat from the bone and push down to create a lollipop shape.
Step 8
Season chicken with you favorite dried and fresh seasoning and let marinade for at least 1 hour.
Step 9
Brush each lollipop well with The Sauce, on a baking sheet and pop into the oven.
Step 10
About 30 minutes into the cook, glaze the drumsticks with the sauce again and let bake until it reaches and internal temperature of 74ºC
