Instructions

Step 1
Lightly grease a 9" pie pan.
Step 2
Whisk together the four, sugar, xanthan gum and salt.
Step 3
Cut the butter into pats, then work the pats into the four mixture till its crumbly, with some larged, pea-sized chunks of butter remaining.
Step 4
Whisk the egg and lemon juice together until very foamy.
Step 5
Mix the dry ingreients.
Step 6
Stir everything together until the mixture holds together. Adding 1 to 3 additional tablespoons col water if necessary.
Step 7
Shape into a ball and chill for an hour or overnight
Step 8
Allow the dough to rest at room temperature for 10 to 15 minutes before rolling.
Step 9
Roll out on a piece of plastic wrap, on a silicone mat that is sprinkled with GF flour.
Step 10
Invert the crust into the prepared pie pan.
