Instructions

Step 1
Preheat oven to 350 and put mini cupcake liners in mini muffin pan(s)
Step 2
Put the corn syrup and butter in a small saucepan. Heat gently until the butter has just melted. Take the saucepan off the heat and stir in Graham cracker crumbs. Divide the mixture evenly among the mini muffin cups, and use a tart tamper to press the crumbs firmly over the bottom and sides of the cups.
Step 3
Bake at 350 for 6 min, or until the crusts are slightly darker in color. Let stand to cool and harden in the pan for 15 min before filling.
Step 4
Meanwhile, pour the cream into a bowl, add the lime zest, and whisk until the mixture begins to thicken. Gradually whisk in the sweetened condensed milk, then the lime juice. Whisk until thick.
Step 5
Pipe the lime cream into the shells. Chill for 30 min.
Step 6
Remove pies from the muffin pan with a rounded offset spatula. Lift them carefully out of the pan and place on the dessert stand or platter. Top with sanding sugar at the last minute.
Step 7
The pies can be frozen in the mini muffin pan (to keep their shape), or you can remove them and layer between sheets of parchment in an air tight container.
