Step 1
Melt 1 T butter over medium-high heat in a large skillet. Add mushrooms, onion, and garlic powder. Cook seven minutes.
Step 2
Stir 1 cup cheese into cooled mushroom mixture. Spread mixture evenly onto each chicken breast (approximately one-third cup mixture per breast). Fold chicken breasts in half and secure with toothpicks.
Step 3
Melt remaining butter. Dip chicken in butter then roll in bread crumbs. Place in lightly greased shallow baking dish and drizzle with remaining butter.
Step 4
Bake at 450 for 20 minutes. Sprinkle with remaining cheese and bake three more minutes.
