Instructions
Step 1
Oven 325. Tie roast. Combine maple syrup, cinnamon, cloves, and cayenne in a bowl.
Step 2
Pat roast dry and season with salt and pepper.
Step 3
Heat oil in a stainless skillet and sear roast on all sides. Set roast aside and pour off excess fat.
Step 4
Add maple mixture to skillet and cook until fragrant, about 30 sec.
Step 5
Off heat, add roast to skillet and roll to coat with glaze. Place skillet in oven and roast 30-35 min. until 140-145, turning halfway through to coat with glaze.
Step 6
Rest roast on a carving board. Cool glaze to thicken. Pour glaze over roast and rest 10-15 min. before slicing ½" thick slices.
