Instructions
Step 1
Place a large skillet in the oven and preheat to 425 degrees
Step 2
Mix together soy sauce, honey, curry powder, vinegar and pepper until well blended
Step 3
While oven is hot, spray the pan lightly with olive oil
Step 4
Place the pork tenderloin in the pan and let it cook for 2 minutes until turning
Step 5
Do this again until the pork is well seared (about 8 minutes)
Step 6
Reduce the heat to 325 and add the curry glaze
Step 7
Coat the pork with the glaze well by turning the pan
Step 8
Return the pan to the oven and cook another 7-10 mintues
Step 9
Turn pork every 3 minutes to keep it well coated
Step 10
Remove from oven and set it on a cutting board to rest for 3 mintues
Step 11
While it is resting place the pan over medium heat and add white wine
Step 12
Deglaze the pan with the white wine using a whisk until there is a thick glaze
Step 13
Remove pan from heat
Step 14
Slice the pork thinly and serve topped with glaze
