Instructions

Step 1
Mix all ingredients for the first knead, cover with plastic wrap, and let it rest at room temperature for 20 minutes
Step 2
Knead the dough at speed 2 for about 10 minutes
Step 3
Let it proof for about an hour until doubled in size
Step 4
Lightly knead the dough then add all ingredients for the second knead
Step 5
Knead at speed 2 for about 8-10 minutes
Step 6
Divide the dough into 8 portions and shape them into balls. Let them rest for 5 minutes at room temperature.
Step 7
Add fillings, shape the buns, cover, and let rest for no longer than 15 minutes at 20-22C.
Step 8
Steam for 15 minutes
