Gluten free bread alternative

This is my new favorite snack alternative to bread or toast. It is slightly more eggy than bread but similar consistency so really hits the spot and as a bonus it’s gluten free

Instructions

Step 1
In a large bowl whisk two eggs then add a good pinch of salt

Next I added 1/2 cup of fresh pumpkin purée ( feel free to add canned pumpkin purée instead ) whisk it all to combine then add the gluten free oat flour and sortie until fully incorporated

Step 3
Spray a burger bun tray or a cupcake tray with some oil ( the cupcake will make smaller ones so you can fill six or fill 3 burger bun circles ) divide the batter then sprinkle pumpkin seeds on top and bake at 190 c for 15 minutes
