Bibb and Bean Burrito Bowl

The bowl is made from Bibb lettuce, so it's literally an edible bowl!

Ingredients
4 servings
12 leavesbibb lettuce
or boston
2 ½ cupscanned beans
drained, pinto, black, or kidney
1 ¼ cupsfrozen corn
thawed
3scallions
green and white parts, very thinly sliced on the diagonal
⅓ cupMonterey Jack cheese
finely diced
¼ cupfresh cilantro
chopped
¼ tspground cumin
¼ tspchili powder
1Hass avocado
peeled, pitted, and diced
⅔ cuptomatillo salsa
medium, salsa verde
¼ tspsea salt
optional
4lime wedges
1can rotel tomatoes
Instructions
Step 1
Divide lettuce leaves among 4 dinner plates or pasta bowls, loosely forming a "bowl" with the leaves.
Step 2
Stir together the beans, tomatoes, corn, scallions, cheese, cilantro, cumin, and chili powder in a medium bowl.
Step 3
Add the avocado, salsa, and salt, and gently stir just enough to combine. Adjust seasoning to taste.
Step 4
Evenly divide the bean mixture among the 4 lettuce "bowls", and serve with the lime wedges on the side.
