Instructions
Step 1
Preheat oven to 350. Line a baking sheet with parchment paper.

Step 2
In a stand mixer, beat coconut oil and brown sugar together until creamy. Beat in vanilla and egg.
Step 3
Add flour, baking soda, baking powder, cinnamon and salt to the bowl then mix in until combined.
Step 4
Scoop with a cookie dough scoop onto baking sheet. Bake for 9 minutes or until just barely golden on the bottoms. Remove and let cool for several minutes before transferring to a cooling rack. best if you underbake just slightly!
