Step 1
Chop carrots into a uniform size and shape
Step 2
Melt the butter in a large skillet.
Step 3
Add carrots, season with salt and pepper, and cook on medium hight heat for 3-4 minutes until they start to caramelize.
Step 4
Add bourbon and reduce until most of the liquid has evaporated (about 5 minutes).
Step 5
Add brown sugar and thyme. Cook for about 5 more minutes until mixture has formed a glaze. Serve and enjoy.
