Instructions
Step 1
Put all ingredients into mixer using a dough hook, start by mixing on low speed for 5 minutes. The dough should be a little sticky
Step 2
Divide the dough into 8 (100g each) rolled into balls and put each on to a square of oiled baking paper.
Step 3
Put another price of greased baking paper on top then flatten each ball out with the palm of your hand while in the baking paper to make a disc and let sit for 10-20 minutes
Step 4
On a greased bench, stretch out each disc, one at a time, very carefully using your thumbs to make sure you don't put holes into the dough. The dough should go paper thin without holes. If you get holes stop what you're doing and move around.
Step 5
Fold the dough in on each side to make a square/rectangle (folding 2 sides in to the middle, and do same with the top and bottom. Refer to the link for a video) and put back on greased paper, with greased paper on top until ready to cook.
Step 6
Turn pan on, make sure its very hot and grease with "a good whack of oil". Put one roti on at a time, using the baking paper to place in and then pull off the roti. Spread some ghee on top as it cooks, then flip when it's golden (1 minute).
Step 7
Sprinkle with salt and then serve.
