Mayonnaise in the Cooking Blender

I mixed and matched several recipes to come up with this one. It is designed for the Pampered Chef cooking blender, but another cooking blender might work just as well. Makes about 3 cups.

Instructions

Step 1
Let eggs sit out until they reach room temp, or place them in a bowl of hot water for a few minutes to warm up before cracking them.
Step 2
Add to blender, eggs, wine vinegar, lemon. Blend on custom no.1 for 20 seconds. stop.
Step 3
Add mustard, salt, sugar to blender and blend on custom no.1 for 20 seconds. stop.
Step 4
slowly drizzle in 1/2 cup of oil while blending on custom no. 1 (about 2 minutes). Cancel.
Step 5
Start blender on sauce setting. Slowly drizzle in remaining oil until blender reaches 165F. or until it pauses at the 'add' feature.
Step 6
taste test your mayo, add more mustard, vinegar, lemon, or sugar as needed and blend on cusotom no.1 if you added anything and each time you add.
Step 7
Pour into a glass air tight container (if using plastic let it cool first) and store in the fridge for up to 1 month. It will thicken a little in the fridge.
