10-Minute Scones — Clodagh McKenna
These scones are so easy to make. Served warm with a smear of butter and some delicious jam and a freshly brewed pot of tea – heaven! They also freeze really well, so double the batch and make ahead.

Instructions
Step 1
1. Pre-heat the oven to 200°C, 400°F, Gas Mark 6.
Step 2
2. Sieve the flour and baking powder into a large bowl. The stir in the sugar and a pinch of salt. Rub the butter into the flour mixture using your fingertips until it resembles fine breadcrumbs. Gradually pour in a sufficient milk to make a soft dough.
Step 3
3. Roll out the dough on a floured surface to a thickness of 1cm (½ inch). Cut into circles with a pastry cutter or an upturned glass. Brush the scones with the remaining milk and a sprinkle of sugar. Place the circles on a floured baking tray.
Step 4
4. Bake in the pre-heated oven for 15 minutes. Once baked, leave to cool on a wire rack.
