MC - Teriyaki portobello mushroom with edamame & quinoa

Salty-sweet teriyaki doesn’t have to mean chicken – here we use meaty portobello mushrooms instead, and serve up on a fluffy quinoa grain bowl. Fresh cucumber, grated carrot and vitamin B9-packed edamame beans make colourful sides.

Instructions

Step 1
Preheat the oven to 200C / fan 180C / gas mark 6.
Step 2
Boil a kettle.
Step 3
Place the tamari, maple syrup and sesame oil into a small bowl.
Step 4
Cut the lime in half; squeeze the juice from half the lime into the bowl. Mix.
Step 5
Rinse the quinoa, then place in a saucepan with 400ml boiling water and a pinch of sea salt.
Step 6
Bring to the boil, then simmer for 15 mins.
Step 7
Drain and return to the saucepan.
Step 8
Finely slice the spring onions.
Step 9
Place both mushrooms onto a tray with the stalks facing up.
Step 10
Pour 1 tbsp marinade into each mushroom cup and season with black pepper.
Step 11
Sprinkle half the sliced spring onions over the top.
Step 12
Cook in the oven for 15- 20 mins, until soft.
Step 13
Heat a small, dry frying pan on a medium-high heat.
Step 14
Toast the cashew nuts for 2-3 mins, until turning golden brown.
Step 15
Remove from the pan and set aside.
Step 16
Finely dice the cucumber.
Step 17
Add the cucumber, edamame beans and remaining spring onions to the cooked quinoa (in the saucepan).
Step 18
Mix well, then leave to one side.
Step 19
Peel the carrots and grate. When the mushrooms are cooked, remove from the oven and slice into thick strips.
Step 20
Divide the edamame quinoa between warm bowls.
Step 21
Lay the sliced mushrooms over the top and place the grated carrots alongside.
Step 22
Squeeze the remaining lime juice over the carrots.
Step 23
Sprinkle the toasted cashew nuts over the top and drizzle all with the remaining tamari dressing.
